What is the difference between sedation and anaesthesia?

Sedation results in significant muscle relaxation and a depressed mentation. Sedated animals look like they are sleeping deeply, but they can still move and jerk suddenly. The senses are still intact, so the sedated animal can still hear and smell.
An anaesthetized animal is completely unconscious; it cannot hear, smell, or feel anything, nor is it able to move.
